What we are looking for

How we test
Wherever we can, we visit as ordinary guests: we book under our own names, pay our own way and are never announced. We return when a place changes hands, refreshes its menu or its reputation shifts, because a guide is only useful if it is current. Where a first-hand visit is not possible, we say so, and we lean on a close, consistent reading of the room rather than a single review.
Independence
Editorial and advertising are kept separate. A venue cannot pay, gift or lobby its way onto a list, and being recommended is never tied to a commercial relationship. We take no per-booking commissions that would bias a ranking, and links to a venue go straight to the venue so you can reserve directly.
