Brett Graham rears his own deer, keeps Jersey cattle and raises Iberian pigs specifically for The Ledbury’s kitchen, an unusual degree of direct control over ingredients for a London restaurant, and it shows in a menu built around produce the chef has personally invested years into rather than simply sourced well.
The restaurant opened on Ledbury Road in 2005, took its first Michelin star within a year and its second in 2010, before a period of closure and reopening led to a third star in 2024, an unusually late promotion for a restaurant that had already been considered among London’s best for close to two decades.
The tasting menu leans on classical French technique applied to British produce, with Japanese ingredients threaded through more recent menus, dishes built around a single vegetable or cut of game treated with enormous care rather than piled with garnish. An in house fungarium supplies mushrooms used across several courses, a level of self sufficiency few kitchens attempt. Bread service alone, baked fresh through the meal, has its own small reputation among regulars who consider it among the best in London.
The dining room itself was redesigned after the reopening, understated rather than showy, letting the food and the service carry the evening rather than the decor. Staff are knowledgeable without hovering, well matched to a kitchen that rewards attention.
The honest caveat is availability and cost. Tables book out weeks or months ahead, the tasting menu runs to several hundred pounds a head with wine, and the whole experience demands a level of commitment, both financial and in terms of time, that puts it firmly in once a year territory for most diners rather than a casual treat. For anyone able to get a table, it remains one of the very few London restaurants that genuinely justifies its reputation course by course.
