A spa at eight in the evening is something else entirely: the city has clocked off, the steam rooms are quieter, and a glass of something cold feels earned rather than indulgent. We went looking for the places that actually stay open into the dark, not the ones that shoo you out at five. Some run dedicated twilight slots with cava and candlelight. Others simply keep the thermal floor running until nine or ten, which is all most people want after a long week. A few caveats.
